Apple Pie A La Pork

Nothing is more American than apple pie, but after spending Memorial Day kayaking with my family so time was not on my side to make an apple pie. But I did have pork in the fridge so tonight I made some really yummy pork tenderloins.
My husband, son and father really liked them and I have to say I did too. If you try this recipe let me know what you think. If you added anything to spice it up for your family, let me know I'd love to try your ideas! I'm sorry my picture did not come out well. Next time I make it I will add a picture.

  • 1 1lb Pork, Tenderloin
  • 2 Cloves of Garlic, Minced
  • 2 Tablespoons Coconut Oil (or an oil of your choice)
  • 20 Ounces of Sliced Apples
  • 1/2 Teaspoon Dried Thyme
  • Cinnamon to Taste/Garnish
Peel, core and slice apples. Steam apples until just slightly crunchy; you don't want them too soft because they'll be cooking with the pork chops for a little bit and you don't want them too hard unless you like hard apples. When apples are just right, place aside.
Cut pork crosswise into medallion size pieces. In a large (12 inch) skillet cook garlic in hot oil over a medium-high heat. Carefully place pork in the hot oil. Cook pork for two minutes on each side, until no longer pink in the center.
Once meat is done, add your apples from before and thyme. Cook, covered for 1 minute. Serve warm and garnish with cinnamon.

Chinese Style Ribs

  • 1/4 Cup Soy Sauce
  • 1/4 Cup Orange Marmalade
  • 2 Tablespoons Ketchup
  • 1 Clove Garlic, crushed
  • 3-4 LBS Country Style Ribs
  • Sesame Seeds; garnish
In a small bowl, combine soy sauce, marmalade, ketchup & garlic. Brush both sides of ribs with mixture. Place in slow cooker. Pour remaining sauce over ribs. Cover & cook on LOW for 8 - 10 hours or until ribs are tender. Garnish with sesame seeds and enjoy!

I served with steamed peas & brown rice.
